  • 2 medium Zucchini Cut into small pieces.
  • 2 tbsp Olive Oil Used for sautéing.
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • 1 tbsp Spike Seasoning Optional.
  • to taste Salt & Black Pepper
  • 1/2 cup Half and Half Can use cream or milk as substitute.
  • 3 Eggs Well-beaten.
  • 1 cup Sharp White Cheddar Can substitute with any white cheese.
  • 2 tbsp Green Onions Chopped.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchini lengthwise into quarters, then chop it into small pieces.
  3. In a frying pan, heat olive oil over medium heat. Add zucchini, oregano, basil, Spike seasoning, salt, and pepper. Cook for 3-4 minutes until slightly softened.
  4. Grease a mini tart pan with olive oil.
  5. Evenly distribute the sautéed zucchini into each tart. Sprinkle cheddar and green onions on top.
  6. Blend goat cheese with half and half until smooth. Whisk in eggs until combined.
  7. Pour the cheesy mixture over the layered zucchini until just full.
  8. Bake for 30 minutes or until the tops are golden brown.
  9. Allow to cool for a few minutes before serving. Garnish with additional green onions.
