Method
 

Preparation Steps
  1. Preheat your oven to 325°F (160°C).
  2. In a small bowl, combine olive oil, seasoned pepper, minced garlic, dried thyme, and salt to create the seasoning mix.
  3. Rub the seasoning mixture all over the surface of the boneless beef roast.
  4. Place the seasoned roast fat side up on a roasting pan rack.
  5. Bake uncovered for approximately 2-1/2 to 3 hours, using a meat thermometer to check for doneness (aim for 135°F for medium-rare).
  6. Let the roast rest for about 10 minutes after baking.
  7. While the roast is resting, mix together the horseradish sauce ingredients in a bowl until well blended.
  8. Slice the roast against the grain into thin pieces and serve with horseradish sauce.
