Preparation
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with non-stick spray.
- In a medium saucepan over low heat, melt brown sugar and butter together until syrupy.
- Pour the syrup into the prepared cake pan and arrange blueberries on top.
- Beat egg whites until stiff peaks form.
- Cream butter and granulated sugar in a large bowl, then add egg yolks and vanilla extract.
- In another bowl, whisk flour, baking powder, and salt. Gradually add to the wet mixture, alternating with milk.
- Fold in the whipped egg whites carefully.
- Pour the batter over blueberries in the cake pan.
- Bake for 55–60 minutes or until a toothpick inserted comes out clean.
- Let the cake cool for 15 minutes, then flip onto a serving platter.
