  • 1/2 cup Unsalted Butter For dairy-free, use coconut oil.
  • 1/4 cup Vegetable Oil Can use canola oil or melted coconut oil.
  • 1 cup Granulated Sugar
  • 2 Eggs Can substitute with flax eggs for vegan option.
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Milk For dairy-free, use almond or plant milk.
  • 1 cup Blueberries Can use frozen blueberries coated in flour.
Blueberry Curd
  • 1 cup Blueberries Fresh or frozen.
  • 2 tablespoons Lemon Juice
  • 1/4 cup Unsalted Butter Room temperature.
  • 1/2 cup Sugar
  • 3 Egg Yolks
Swiss Meringue Buttercream
  • 3 Egg Whites
  • 1 cup Granulated Sugar
  • 1 cup Unsalted Butter At room temperature.
  • 1/2 cup Blueberry Curd For flavor.

Method
 

Blueberry Curd
  1. In a saucepan, combine fresh blueberries with lemon juice over medium heat, stirring until berries soften, about 5 minutes.
  2. Strain the mixture to extract the juice.
  3. In a mixing bowl, beat room temperature butter and sugar until light and fluffy.
  4. Gradually add egg yolks and blueberry juice, then cook over low heat until thickened, reaching 170°F.
  5. Chill the curd in the fridge.
Cupcake Batter
  1. Preheat oven to 350°F and line a 12-cup muffin tin with liners.
  2. Beat unsalted butter, vegetable oil, and sugar until fluffy, about 4 minutes.
  3. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  4. Mix dry ingredients and wet ingredients alternately with milk until smooth.
Fold in Blueberries
  1. Dust blueberries with flour to prevent sinking.
  2. Gently fold flour-coated blueberries into the batter.
  3. Spoon batter into lined cupcake wells, filling each about two-thirds full.
  4. Add a few extra blueberries on top.
Bake
  1. Bake filled cupcake tin for approximately 18 minutes, or until toothpick comes out clean.
  2. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Swiss Meringue Buttercream
  1. Set up a double boiler and whisk egg whites and sugar until 140°F.
  2. Remove from heat and whip until stiff peaks form, about 7 minutes.
  3. Gradually add room temperature butter, mixing until smooth.
  4. Incorporate chilled blueberry curd.
Assemble Cupcakes
  1. Create a hole in the center of each cooled cupcake.
  2. Spoon blueberry curd into each hole, filling generously.
  3. Pipe blueberry Swiss meringue buttercream on top.
