Steps
  1. Prepare the Cream Cheese Filling by blending cream cheese, egg yolk, powdered sugar, and vanilla extract until smooth. Freeze for 30 minutes.
  2. Make the Crumb Topping by whisking cake flour, granulated sugar, butter, and salt until coarse crumbs form. Set aside.
  3. Preheat oven to 425°F. Prepare muffin pan with greasing or liners.
  4. Cream softened butter, vegetable oil, and brown sugar until light and fluffy.
  5. Add egg whites to the creamed mixture, blending in vanilla extract and red velvet emulsion.
  6. Combine dry ingredients and buttermilk alternately into the wet mixture.
  7. Fold in whipped heavy cream until the batter is light and airy.
  8. Scoop batter into muffin cups, add frozen cream cheese filling, then cover with remaining batter.
  9. Sprinkle crumb topping evenly over muffins.
  10. Bake at 425°F for 6 minutes, then reduce to 350°F and bake for 18-22 minutes.
