  • 0.5 teaspoon Black Pepper adjust according to taste
  • 1 teaspoon Chili Powder or paprika for milder flavor
  • 2 tablespoons Olive Oil or avocado oil
For the Skewers
  • 2 medium Peaches fresh or frozen
  • 2 medium Jalapeno Peppers adjust for spice preference
For the Glaze
  • 0.5 cup Peach Preserves or apricot preserves
  • 2 tablespoons Soy Sauce or tamari
  • 1 tablespoon Apple Cider Vinegar or white vinegar
  • 1 tablespoon Dijon Mustard or yellow mustard
  • 2 cloves Minced Garlic or garlic powder
  • 1 teaspoon Red Pepper Flakes omit for non-spicy

Method
 

Step-by-Step Instructions
  1. Soak wooden skewers in water for at least 30 minutes.
  2. In a large mixing bowl, combine cubed chicken breast with kosher salt, black pepper, chili powder, and olive oil. Marinate for about 10 minutes.
  3. Thread marinated chicken, peach quarters, and jalapeno chunks onto soaked skewers, alternating them.
  4. Mix peach preserves, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, salt, pepper, and red pepper flakes to create the glaze.
  5. Preheat air fryer to 400°F (200°C). Cook skewers for 12-15 minutes, brushing with glaze halfway through.
  6. Carefully remove skewers from the air fryer and let rest for a couple of minutes before serving.
