- In a large mixing bowl, combine cubed chicken breast with kosher salt, black pepper, chili powder, and olive oil. Marinate for about 10 minutes.
- Thread marinated chicken, peach quarters, and jalapeno chunks onto soaked skewers, alternating them.
- Mix peach preserves, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, salt, pepper, and red pepper flakes to create the glaze.
- Preheat air fryer to 400°F (200°C). Cook skewers for 12-15 minutes, brushing with glaze halfway through.
