Ingredients

For the Meat Mixture
  • 1 pound ground beef or lamb Lamb adds a rich flavor
  • 1 medium onion Grated for even mixing
  • 3 cloves garlic Grated for a smoother consistency
  • 1/2 cup plain yogurt Can substitute with a dairy-free option
  • 2 tablespoons olive oil Essential for enhancing juiciness
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon sweet paprika Red or smoked varieties work well
  • 1 teaspoon oregano
  • 1/4 teaspoon cayenne pepper Optional for heat
  • 2 tablespoons tomato paste or BBQ sauce Use according to preference
For Serving
  • 5 pieces warm pita or large tortilla Gluten-free options work too
  • 2 cups shredded lettuce or cabbage
  • 1 medium red onion Slice thinly for easy layering
  • 1 cup pickles
  • 1/2 cup tahini sauce or tzatziki Optional for extra flavor
  • 1/4 cup fresh parsley For garnish

Equipment

  • Baking tray
  • Parchment paper
  • Rolling Pin

Method

Step-by-Step Instructions
  1. In a large bowl, combine the ground beef or lamb with grated onion, garlic, plain yogurt, and tomato paste. Add salt, pepper, cumin, sweet paprika, oregano, and olive oil. Mix until well incorporated and sticky, about 3-5 minutes.
  2. Divide the mixture into five equal portions. Roll each portion between two pieces of parchment paper into a thin rectangle, about 1/4-inch thick.
  3. Peel off the top parchment layer and roll the meat tightly into a log, pinching the ends to seal.
  4. Preheat oven to 200°C (400°F). Place the rolled kebabs seam side down on a parchment-lined tray and bake for 20-25 minutes until golden brown.
  5. Let the kebabs rest for about 5 minutes before slicing thinly for serving.
  6. Warm your pita or tortilla, stuff with kebab slices, and add toppings like lettuce, red onion, and pickles. Drizzle with sauce and enjoy!
