Preparation
- Peel and julienne the fresh carrots into thin strips.
- Mince the garlic and add it to the bowl with the carrots.
- In a separate bowl, whisk together rice vinegar, sugar, sesame oil, and red pepper flakes to make the dressing.
- Pour the dressing over the carrot and garlic mixture and toss to coat.
- Cover and marinate in the refrigerator for at least 30 minutes.
- Serve chilled or at room temperature, garnished with sesame seeds.
