- In a large mixing bowl, combine cottage cheese, fresh blueberries, lemon zest, honey, almond flour, vanilla extract, and a pinch of salt. Gently stir the mixture with a spatula, taking care not to mash the blueberries.
- Using a tablespoon, scoop out portions of the mixture and roll them into balls between your palms. Place each ball on a parchment-lined baking sheet.
- While shaping the bites, preheat your oven to 350°F (175°C).
- Once the oven is preheated, bake the shaped bites for 10-12 minutes.
- After baking, remove the bites from the oven and allow them to cool slightly on the baking sheet for about 5 minutes. Drizzle additional honey over the warm bites and garnish with a few more blueberries.
