  • 4 fillets Salmon fresh or properly thawed
  • 2 tablespoons Lemon Juice freshly squeezed
For the Potatoes
  • 4 cups Potatoes waxy potatoes like Yukon Gold
  • 2 tablespoons Olive Oil high-quality extra virgin
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Broccoli
  • 2 cups Broccoli fresh or frozen
For the Lemon Butter Sauce
  • 4 tablespoons Butter
  • 2 cloves Garlic minced (optional)

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut waxy potatoes into wedges, toss with olive oil, salt, and pepper, spread on a baking sheet, and roast for 25-30 minutes.
  3. Steam broccoli for 5-7 minutes until bright green and tender.
  4. Heat a skillet over medium-high heat, sear salmon fillets skin-side down for 4-5 minutes, flip and cook for an additional 4-5 minutes.
  5. Add butter and lemon juice to the pan, spoon over salmon while cooking.
  6. Serve crispy potatoes and steamed broccoli alongside glazed salmon. Drizzle remaining lemon butter sauce over everything.
