- In a medium saucepan, combine 2/3 cup granulated sugar, finely grated lemon zest, and 3 large eggs over medium heat. Stir constantly for 2-3 minutes until light and frothy.
- Gradually add in 1 cup fresh lemon juice and cook for about 5 minutes until thickened. Remove from heat and whisk in cold butter until smooth, then strain.
- While the lemon curd chills, combine 8 ounces softened low-fat cream cheese, 1 cup Greek yogurt, 1/3 cup granulated sugar, and optional vanilla in a mixing bowl. Blend until smooth and fluffy.
- Crush 1 cup graham crackers into fine crumbs and prepare jars for assembly.
- Layer the parfaits starting with graham cracker crumbs, then vanilla cheesecake, followed by lemon curd. Repeat layers and finish with lemon curd on top.
- Chill assembled parfaits for a few hours or serve immediately with whipped cream on top.
