Equipment

Method

Step-by-Step Instructions
  1. Begin by patting the cod dry with paper towels to ensure a perfect texture. Place the dried cod fillets on a plate, allowing them to rest.
  2. In a medium bowl, combine the all-purpose flour, ground coriander, paprika, cumin, salt, black pepper, and red pepper flakes. Whisk thoroughly until the spices are evenly distributed.
  3. Preheat your oven to 400°F (200°C). In a separate bowl, whisk together lemon juice, olive oil, and melted butter. Stir in minced garlic.
  4. Dip each piece of dried cod into the lemon-garlic mixture, then dredge in the prepared flour mixture.
  5. In an oven-safe skillet, heat olive oil over medium-high heat. Sear the coated cod fillets for about 2 minutes on each side.
  6. Pour the remaining lemon-garlic sauce over the cod fillets. Transfer to the preheated oven and bake for 8-10 minutes.
  7. Once baked, remove from the oven and garnish with chopped fresh parsley.
