For the Topping
  • 1 cup Ricotta cheese Can substitute with cottage cheese.
  • 1 cup Mozzarella cheese Use fresh for the best results.
  • ½ cup Parmesan cheese Optional but recommended.
  • 1 Lemon zest & juice Fresh is best.
  • Fresh thyme Can substitute with rosemary or basil.
For Finishing Touches
  • 1 tbsp Honey Can be replaced with maple syrup.
  • Red pepper flakes Optional.

Method
 

Step-by-Step Instructions
  1. In a small bowl, combine warm water with sugar and active dry yeast. Let sit until frothy.
  2. In a large mixing bowl, whisk together all-purpose flour and salt. Pour in the yeast mixture and add olive oil.
  3. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  4. Shape the dough into a ball, place in an oiled bowl, cover, and let it rise in a warm spot for 1-1.5 hours.
  5. In a separate bowl, combine ricotta, mozzarella, Parmesan, lemon zest, and juice. Mix until creamy.
  6. Preheat your oven to 475°F (245°C) while the dough rises.
  7. Punch down the dough and roll it out into a 12-inch circle on a floured surface.
  8. Transfer the rolled-out dough to a baking sheet and spread the cheese mixture over it, leaving a border.
  9. Sprinkle fresh thyme on top and bake for 10-12 minutes until golden and crispy.
  10. Drizzle with olive oil and honey, slice, and serve warm.
