- In a mixing bowl, combine 2 cups of plain Greek yogurt with 2 tablespoons of honey. Mix until smooth and creamy, about 1-2 minutes.
- Incorporate the juice of one fresh lemon and the zest of half a lemon into the yogurt mixture. Stir well for an additional 1-2 minutes until uniform.
- Gently fold in 1 cup of lightly crushed fresh raspberries into the yogurt mixture, being careful not to over-mix.
- Pour the yogurt mixture evenly into ice cube trays or silicone molds, smoothing the top with a spatula.
- Place the filled trays in the freezer and freeze for at least 3 hours, or until firm.
- Remove the yogurt bites from the molds and serve immediately or store in an airtight container in the freezer.
