- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add diced onions and sauté for about 5 minutes until translucent. Incorporate minced garlic for additional 30 seconds until fragrant.
- In a large bowl, combine the sautéed onions, garlic, spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, and spices. Season with salt and pepper, and mix until just combined.
- Divide the mixture and shape it into about eight patties, each ½ inch thick. Refrigerate for about 30 minutes to firm up.
- In the same skillet, heat remaining olive oil over medium heat. Add patties and cook for 5-6 minutes on each side until golden brown and cooked through.
- Transfer the cooked patties to a plate lined with paper towels to drain excess oil and serve warm with garnishes or a salad.
