  1. Begin by preparing your fresh ingredients for the Mediterranean Chicken Salad. Dice the cucumber, making sure to remove the seeds for optimal texture. Finely mince the red onion and chop the fresh dill. Crumble the feta cheese and chop the olives. Place all these ingredients in separate bowls to make mixing easier as you go.
