  • 2 medium Zucchini sliced into rounds
  • 2 tablespoons Extra virgin olive oil
  • 3 cloves Fresh minced garlic
  • 2 tablespoons Lemon juice freshly squeezed
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • to taste Salt & black pepper adjust to personal taste
  • 1 cup Mozzarella cheese can substitute with Italian blend
  • 1/2 cup Parmesan cheese optional feta can be used
  • 1/4 cup Fresh parsley for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine chicken breasts, zucchini, olive oil, garlic, lemon juice, oregano, basil, salt, and pepper. Toss well.
  3. Spread the chicken and zucchini mixture in a single layer in a 9x13 inch baking dish.
  4. Sprinkle mozzarella and Parmesan cheese evenly over the mixture.
  5. Bake uncovered for 25-30 minutes until chicken reaches 165°F and cheese is bubbly.
  6. Let rest for a few minutes and garnish with parsley before serving.
