Noodles
  • 200 grams noodles can use knife-cut, udon, or rice noodles for gluten-free
Vegetables
  • 1 cup bok choy thinly sliced
  • 1 medium carrot thinly sliced
  • 1 medium red pepper substitute with mushrooms or tofu if desired
Garnish
  • 1 tablespoon fresh herbs cilantro or green onions
  • 1 tablespoon sesame seeds preferably toasted

Method
 

Preparation
  1. Cook noodles according to package instructions until al dente, then drain and rinse briefly under cold water.
  2. In a medium-sized pan, heat miso paste and chili oil over low to medium heat for 2-3 minutes until well combined.
  3. Add the cooked noodles to the pan and gently toss with the sauce for 2-3 minutes.
  4. Stir-fry the chosen vegetables with the noodles for an additional 2-3 minutes.
  5. Serve warm, garnished with fresh herbs and sesame seeds.
