Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9 x 5 loaf pan with cooking spray or parchment paper.
  2. In a medium bowl, whisk together 1¾ cups of all-purpose flour, 1 teaspoon of baking soda, and ¼ teaspoon of salt.
  3. In a large bowl, mix ½ cup of canola oil, ½ cup of granulated sugar, ¼ cup of brown sugar, 2 large eggs, and 1 teaspoon of vanilla extract until smooth, then add 3 ripe, mashed bananas.
  4. Gradually combine the dry ingredients with the wet ingredients using a spatula until just mixed.
  5. Toss 1 cup of blueberries with 1 tablespoon of flour to coat, then gently fold into the batter.
  6. Pour the batter into the prepared loaf pan and bake for approximately 60 minutes, or until a toothpick comes out clean.
  7. Allow the bread to cool in the pan for at least 20 minutes, then transfer to a wire rack to cool completely.
