Step-by-Step Instructions
  1. Prepare the Peaches: Slice the ripe peaches into thin wedges and place them in a clean jar. Add fresh rosemary and thyme.
  2. Create the Pickling Liquid: In a medium saucepan, combine the white balsamic vinegar, white vinegar, kosher salt, and honey. Heat on medium until salt dissolves.
  3. Pickle the Peaches: Pour the warm pickling liquid over the peaches, let cool for 10 minutes, then add cold water and seal. Let pickle for 30 minutes to 2 hours.
  4. Assemble the Skewers: Wrap each peach wedge with prosciutto, skewer with a basil leaf and mozzarella pearl, alternating ingredients.
  5. Make the Dressing: Whisk leftover pickling liquid with olive oil, minced garlic, rosemary, and thyme until emulsified.
  6. Drizzle and Serve: Arrange skewers on a platter, drizzle with dressing, and serve immediately.
