Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook lasagna noodles in salted boiling water according to package instructions until al dente, about 8-10 minutes. Drain and rinse with cold water.
  3. Heat 2 tablespoons olive oil in a large skillet over medium heat. Sauté chopped onion for 3-4 minutes until translucent, then add minced garlic and cook for an additional minute.
  4. Add sliced mushrooms, dried thyme, salt, and pepper, sautéing until mushrooms are tender. Stir in fresh spinach and wilt for about 2 minutes.
  5. Spread marinara sauce on the bottom of the baking dish. Layer lasagna noodles, ricotta cheese, the sautéed filling, and mozzarella and parmesan. Repeat layers, finishing with noodles topped with marinara and remaining cheeses.
  6. Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 10-15 minutes until cheese is golden brown.
  7. Allow to cool for 10 minutes, garnish with fresh basil, and serve.
