  • 1 cup Plum Tomatoes finely diced
  • 1/2 cup Red/White Onion chopped
  • 1/4 cup Cilantro chopped
For the Dressing
  • 1 teaspoon Lime Zest freshly grated
  • 1 tablespoon Lime Juice
  • 2 tablespoons Extra Virgin Olive Oil
  • 1/2 teaspoon Salt to taste
For the Spice Mix
  • 1/2 teaspoon Chili Powder optional
  • 1/4 teaspoon Ground Cumin optional
  • 1 tablespoon Hot Sauce optional

Step-by-Step Instructions
  1. In a large mixing bowl, finely dice the zucchini and plum tomatoes. Chop the red or white onion and cilantro, then add them to the bowl.

  3. Sprinkle in a pinch of salt, chili powder, and ground cumin to enhance the flavor profile.
  4. Gently fold the mixture to combine all ingredients evenly, and let the salsa sit for about 10–15 minutes.
