For the Soup
  • 1 lb Organic Chicken drumsticks, breasts, or thighs
  • 1 tsp Sea Salt adjust to taste
  • 1/2 tsp Black Pepper
  • 1 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp All-Purpose Seasoning e.g., Flavo Rice
  • 2 tbsp Extra Virgin Olive Oil
  • 4 cups Organic Chicken Stock (Low-Sodium) or vegetable stock
  • 2 cups Organic Bone Broth optional
  • 2 cups Carrots chopped
  • 1 medium Red Onion
  • 3 cloves Garlic Cloves minced
  • 4 sprigs Fresh Thyme
  • 1 each Scotch Bonnet Pepper adjust to heat preference
  • 2 medium Irish Potatoes cubed
  • 2 each Mini Corn on the Cob
  • 1 tsp Turmeric Powder optional
  • 1 tsp Dried Basil
  • 1 tsp Dried Parsley
For the Dumplings (Spinners)
  • 1 cup Organic All-Purpose Flour or gluten-free flour
  • 1/2 cup Filtered Cold Water add gradually
  • 1/2 tsp Sea Salt to taste

Method
 

Steps for Nourishing Jamaican Chicken Soup
  1. Season the Chicken: Coat chicken pieces with sea salt, black pepper, garlic powder, smoked paprika, and onion powder. Marinate for 10 minutes.
  2. Sear the Chicken: Heat olive oil in a Dutch oven, add chicken, and sear for 2-3 minutes on each side until golden brown. Remove and set aside.
  3. Sauté Vegetables: In the same pot, sauté chopped red onion and minced garlic until translucent and fragrant, about 3-4 minutes.
  4. Combine Ingredients: Stir in chopped carrots and remaining seasonings, return chicken to pot, add stock and water, bring to a boil.
  5. Make Dumplings (Spinners): Mix flour and salt, gradually add water to form a stiff dough, roll into small dumplings.
  6. Simmer: Add dumplings to boiling broth, reduce heat, cover, and simmer for 20-25 minutes until chicken is tender and dumplings are cooked.
