Step-by-Step Instructions
  1. Begin by warming 2 tablespoons of olive oil in a high-sided medium skillet over medium heat for about 2 minutes.
  2. Once the oil is hot, add 1 finely chopped onion and 3 minced garlic cloves to the skillet. Sauté these for 3-4 minutes, stirring occasionally, until the onion is soft and translucent.
  3. Next, incorporate 4-5 chopped fresh tomatoes into the mix. Cook them, stirring gently, for about 5-6 minutes until they soften and caramelize slightly.
  4. Now it's time to add 4 cups of chicken or vegetable stock to the skillet. Stir well before adding 12 ounces of spaghetti.
  5. While your pasta simmers, stir occasionally to prevent sticking and ensure even cooking. You'll know the pasta is ready when it's cooked al dente.
