  • 2 medium carrots Zucchini can be used as an alternative.
  • 1 teaspoon salt Adjust to taste.

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. In a bowl, add chicken thighs, drizzle with olive oil, and sprinkle with turmeric, salt, and pepper. Coat thoroughly.
  3. Place the seasoned chicken thighs skin-side up on the baking sheet.
  4. In another bowl, toss asparagus and carrots with olive oil, salt, and pepper. Arrange around the chicken.
  5. Bake for 20 to 25 minutes, until chicken reaches 165°F (74°C) and vegetables are tender.
  6. Let chicken rest for a few minutes and squeeze fresh lemon juice before serving.
