- Microwave ¼ cup of mascarpone cheese for about 5 seconds until soft. Combine with ½ cup heavy cream, ¼ cup whole milk, and 2 tablespoons vanilla syrup. Use a milk frother to whip until creamy, then set aside.
- In a saucepan, combine 1 cup of whole milk, 2 tablespoons vanilla syrup, 2 tablespoons cocoa powder, and ½ teaspoon rum extract. Heat over low, whisking until warm but not boiling, about 5 minutes.
- Brew a strong shot of espresso or prepare 1 cup of freshly brewed coffee in a large mug and set aside.
- Pour the warm chocolate milk mixture over the brewed coffee. Stir gently to combine.
- Dollop the mascarpone cold foam over the assembled latte and dust lightly with cocoa powder. Add a lady finger for garnish if desired.
