  • Mint leaves Optional garnish for a refreshing touch.

Equipment

  • mixing bowl
  • spatula
  • Baking Sheet
  • Parchment paper

Method

Pavlova Steps
  1. Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper, drawing a 9-inch circle for the meringue shape.
  2. Beat 4 egg whites in a mixing bowl until soft peaks form. Gradually add 1 cup granulated sugar, increasing speed to high until stiff peaks form (5-7 minutes).
  3. Gently fold in 1 tablespoon cornstarch and 1 teaspoon white vinegar into the whipped egg whites.
  4. Spoon the meringue mixture onto the parchment paper within the drawn circle, creating a slight well in the center.
  5. Bake the meringue for about 1 hour and 15 minutes until crispy outside and soft inside. Turn off the oven and let it cool inside.
  6. Whip 1 cup heavy cream until soft peaks form. Add 2 tablespoons powdered sugar and mix gently.
  7. Transfer the cooled meringue to a platter and fill the well with whipped cream.
  8. Top with 2 cups of mixed fresh berries for a show-stopping dessert.
  9. Sprinkle fresh mint leaves around the berries before serving.
