  • 0.5 lb Pasta any shape
  • to taste Salt for boiling water
For the Sauce
  • 3/4 cup Cream Cheese avoid low-fat for best results
  • 1/4 cup Grated Parmesan plus extra for serving
  • 1 Tbsp Olive Oil for sautéing garlic
  • 1-2 Garlic Cloves minced
  • 1/2 cup Cooking Water reserved from boiling pasta
For Seasoning
  • to taste Salt
  • 1/4-1/2 tsp Chili Flakes optional

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. Reserve 1/2 cup of the cooking water before draining the pasta. Do not rinse the pasta.
  3. Heat olive oil in a skillet over low heat. Add minced garlic and sauté until fragrant, about 2-3 minutes.
  4. Add cream cheese and reserved cooking water to the skillet. Stir until the cream cheese melts into a creamy sauce.
  5. Sprinkle in grated Parmesan and mix until blended. Adjust sauce thickness with reserved water if needed.
  6. Add the drained pasta to the skillet, tossing to coat with the sauce. Serve immediately with extra cheese and pepper if desired.
