  • 4 cups Cooked Rice Day-old rice works best.
  • 1 cup Mixed Vegetables Peas, carrots, or bell peppers
  • 2 tablespoons Soy Sauce Low-sodium recommended.
  • 2 cloves Garlic Minced.
  • 2 tablespoons Green Onions Chopped, for garnish.
  • 2 large Eggs
For Protein Add-ins
  • 1 cup Shrimp Cooked.
  • 1 cup Chicken Cooked, rotisserie recommended.
  • 1 cup Tofu Pressed and cubed.
Optional Seasonings
  • 1 tablespoon Sesame Oil Adjust to taste.
  • 1 teaspoon Black Pepper Freshly ground.
  • 1 teaspoon Chili Flakes Optional for heat.

Method
 

Preparation
  1. Gather all your ingredients and preheat the air fryer to 350°F (175°C).
Mix Ingredients
  1. In a bowl, combine the cooked rice, mixed vegetables, minced garlic, and proteins. Drizzle with soy sauce and mix well.
Scramble Eggs
  1. Whisk eggs in a bowl and pour into the preheated air fryer. Cook for 3-4 minutes until scrambled.
Air Fry the Rice
  1. Transfer the rice mixture to the air fryer basket and cook for 10-15 minutes, shaking halfway through.
Add Final Seasonings
  1. Remove the rice from the air fryer, drizzle with sesame oil and sprinkle with pepper or chili flakes.
Serve
  1. Transfer to a serving bowl, garnish with green onions, and serve with extra soy sauce.
