Steps
- Heat a 12-inch skillet over medium heat and add olive oil. Sprinkle shrimp with chili powder and salt. Cook shrimp for 3-4 minutes until pink and opaque, then remove from pan.
- Add butter and onion to the skillet, sauté for about 4 minutes until translucent.
- Stir in garlic and cook for 2 minutes until fragrant.
- Add corn and smoked paprika, stir and cook for 2 minutes.
- Pour in half-and-half and bring to a simmer. After 2 minutes, add feta cheese until melted.
- Squeeze lime juice into the sauce, return shrimp to the skillet, and heat for 2-3 minutes.
- Garnish with corn, lime slices, and cilantro. Serve immediately.
