For the Cream Sauce
  • 2 tablespoons Olive Oil used for cooking shrimp; can substitute with vegetable oil.
  • 2 tablespoons Butter salted; adds richness and creaminess.
  • 0.5 cup Onion chopped; offers sweetness; shallots can be a substitute.
  • 5 cloves Garlic minced; reduce for a milder taste.
For the Corn Mixture
  • 1.5 cups Corn Kernels from 2 ears of corn; frozen corn is an option.
  • 1 teaspoon Smoked Paprika lends smokiness; regular paprika works in a pinch.
For the Creamy Base
  • 1 cup Half-and-half or substitute with heavy cream or milk.
  • 4 oz Feta Cheese crumbled; block feta is recommended.
For Garnishing
  • 2 small Limes for acidity and freshness.
  • Fresh Cilantro for garnishing; optional.

Method
 

Steps
  1. Heat a 12-inch skillet over medium heat and add olive oil. Sprinkle shrimp with chili powder and salt. Cook shrimp for 3-4 minutes until pink and opaque, then remove from pan.
  2. Add butter and onion to the skillet, sauté for about 4 minutes until translucent.
  3. Stir in garlic and cook for 2 minutes until fragrant.
  4. Add corn and smoked paprika, stir and cook for 2 minutes.
  5. Pour in half-and-half and bring to a simmer. After 2 minutes, add feta cheese until melted.
  6. Squeeze lime juice into the sauce, return shrimp to the skillet, and heat for 2-3 minutes.
  7. Garnish with corn, lime slices, and cilantro. Serve immediately.
