Ingredients
  

Bars
  • 6 cups Rice Krispies
  • 3 tablespoons Butter Can use dairy-free alternative
  • 4 cups Mini marshmallows
Red Layer
  • 2 cups Fresh strawberries Can substitute with raspberries
  • 1 tablespoon Gelatin Can use agar-agar as vegetarian alternative
White Layer
  • 8 ounces Cream cheese Can substitute with Greek yogurt
  • 1 cup Powdered sugar
  • 1 teaspoon Vanilla extract
Blue Layer
  • 2 cups Blueberries Can use black grapes as visual substitute
  • 1 tablespoon Blue gelatin

Method
 

Preparation
  1. Wash and dry strawberries and blueberries, slice strawberries. Measure Rice Krispies.
  2. Melt butter in saucepan, add marshmallows, stir until smooth. Combine with Rice Krispies.
  3. Press half Rice Krispie mixture into baking dish. Mix strawberries with gelatin, spread over base.
  4. Blend cream cheese, powdered sugar, and vanilla; spread over the strawberry layer.
  5. Mix blueberries with blue gelatin, layer over the cream cheese mixture.
  6. Cover and chill for at least 2 hours, then let sit at room temperature for 10 minutes before cutting.
  7. Cut into squares and serve, optionally drizzling with melted white chocolate.

Notes
