Method
 

Preparation Steps
  1. Wash the cucumber and strawberries thoroughly under cold water. Slice the cucumber into 1/8-inch rounds and hull the strawberries before cutting them into 1/4-inch thick pieces.
  2. In a medium bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper until well combined.
  3. In a large mixing bowl, gently combine the cucumber and strawberry slices. Pour the dressing over the salad and toss gently to coat.
  4. Add the chiffonaded mint to the salad and toss again to incorporate.
