Step-by-Step Instructions
  1. In a large mixing bowl, whisk together fresh lemon juice and Dijon mustard until combined. Gradually pour in extra-virgin olive oil while whisking continuously to create a smooth emulsion. Stir in finely chopped red onion and fresh dill, season with kosher salt and black pepper. Set aside.
  2. Bring a large pot of salted water to a rolling boil. Add the orzo pasta and cook according to package directions until al dente, about 8-10 minutes. Drain the orzo and return it to the pot.
  3. Add the warm orzo to the dressing and toss to coat evenly. Then, add diced Persian cucumbers, halved cherry tomatoes, and rinsed chickpeas. Stir gently to combine.
  4. Fold in crumbled feta cheese gently to avoid breaking it too much. Serve immediately or allow the salad to chill in the refrigerator for about 30 minutes to enhance the flavors.
