Method
 

Step‑by‑Step Instructions
  1. Cut 4 cups of seedless watermelon into cubes, place in a blender, and blend on high for 1-2 minutes until smooth.
  2. Strain the watermelon puree through a fine mesh strainer into a pitcher to separate juice from pulp.
  3. Stir 1 tablespoon of lime juice into the watermelon juice until fully incorporated.
  4. In each glass, place a few fresh mint leaves at the bottom and muddle gently.
  5. Pour the watermelon juice over the muddled mint leaves in each glass, filling it about two-thirds full.
  6. Top each glass with 1 cup of sparkling water or club soda, stirring gently.
  7. Garnish with a sprig of mint and serve immediately.
