- Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan.
- In a medium mixing bowl, combine 1 cup of all-purpose flour, 1/4 cup of powdered sugar, and a pinch of salt. Pour in 1/2 cup of melted unsalted butter and mix until crumbly. Press firmly into the bottom of the baking pan.
- In another bowl, whisk together 1 cup of granulated sugar, 2 large eggs, 1/2 cup of fresh lemon juice, and lemon zest until smooth. Add 1 cup of pureed fresh strawberries and 1/2 teaspoon of baking powder, blending until incorporated.
- Pour the filling over the crust and spread it evenly. Bake in the preheated oven for 25-30 minutes until the edges are golden and the center jiggles slightly.
- Allow the bars to cool completely for about an hour, then dust with powdered sugar before serving.
