  • 1 cup Feta Cheese Crumble for texture

  • 0.5 cup Lemon Juice Freshly squeezed
  • 2 tablespoons Olive Oil Extra virgin preferred

Step-by-Step Instructions
  1. Chill half a watermelon in your refrigerator for about 30 minutes. Slice the rind and cut into bite-sized cubes.
  2. Rinse strawberries under cool water, remove green hulls, and slice into halves or quarters.
  3. Wash cucumber thoroughly and slice into bite-sized pieces or thin rounds.
  4. In a large mixing bowl, combine watermelon cubes, sliced strawberries, cucumber pieces, and feta cheese.
  5. In a small bowl, blend lemon juice, olive oil, salt, and pepper for the vinaigrette. Whisk until smooth.
  6. Drizzle vinaigrette over salad mixture and gently toss to combine.
  7. Tear or chop fresh mint leaves and sprinkle over the salad before serving.
