  • 1 cup Wonton strips or tortilla chips For added crunch.

Preparation Steps
  1. Begin by marinating the chicken breasts in chipotle seasoning for at least 30 minutes.
  2. Heat a grill or skillet over medium-high heat and cook the marinated chicken for 6-7 minutes per side until internal temperature reaches 165°F. Let rest before slicing.
  3. While chicken marinates, cook your rice according to package instructions for 15-20 minutes for white rice or 25-30 minutes for brown rice. Fluff and set aside.
  4. Rinse and chop bell peppers and red onion into bite-sized pieces. Sauté the veggies for 5-7 minutes until softened but crisp.
  5. In a large bowl, layer cooked rice, sliced chicken, sautéed veggies, black beans, and corn.
  6. Drizzle sour cream or Greek yogurt over the bowl and squeeze fresh lime juice on top.
