- Thaw octopus overnight in the fridge or submerge in cold water for an hour if short on time.
- Combine octopus, lemon slices, and red wine vinegar in a large pot and add 2.5 to 3 cups of water. Bring to a boil, then simmer for 40-50 minutes.
- Carefully remove the octopus and let it cool on a cutting board. Slice the legs away from the body, discarding the beak and tough parts.
- Preheat your grill over high heat and brush the grates with olive oil to prevent sticking.
- Coat octopus pieces with olive oil, then grill for 10-12 minutes, turning every 2-3 minutes until charred.
- Transfer octopus to a serving plate, whisk olive oil and lemon juice for Ladolemono dressing, drizzle over the octopus, sprinkle with oregano, and serve with lemon wedges.
