Ingredients

For the Marinade
  • 1 cup ketchup Can substitute with tomato paste for thickness
  • 1/4 cup apple cider vinegar White vinegar or lemon juice can be used
  • 1/4 cup brown sugar Honey is a great alternative
  • 2 tablespoons Worcestershire sauce Soy sauce is a substitute
  • 1 tablespoon smoked paprika Regular paprika can be used if smoked isn't available
  • 1 teaspoon garlic powder Use 2-3 cloves of fresh minced garlic instead
  • 1 teaspoon onion powder Fresh onions can be a delicious alternative
  • 1 teaspoon black pepper Adjust based on taste
  • 2 tablespoons olive oil Can replace with any neutral oil
For the Chicken
  • 1.5 pounds boneless, skinless chicken thighs Chicken breasts are a leaner option
  • 1 teaspoon salt Kosher salt is recommended

Equipment

  • grill
  • mixing bowl
  • meat thermometer

Method

Step-by-Step Instructions
  1. In a medium bowl, whisk together the ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, black pepper, and olive oil until well combined.
  2. Take your boneless, skinless chicken thighs and immerse them in the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour.
  3. About 15 minutes before grilling, preheat your outdoor grill to medium-high heat.
  4. Once marinated, remove the chicken thighs from the fridge and let the excess marinade drip off. Lightly sprinkle each piece with kosher salt.
  5. Place the chicken thighs on the preheated grill, grilling each side for 6 to 8 minutes or until the internal temperature reaches 165°F.
  6. During the last 2 to 3 minutes of grilling, brush your favorite BBQ sauce over the chicken thighs.
  7. Once cooked, remove the chicken from the grill and let it rest on a plate for 5 to 10 minutes.
