Preparing Hot Honey Chicken Quinoa Bowl
  1. Rinse 1 cup of quinoa under cold water. Combine the rinsed quinoa with 2 cups of water or low-sodium chicken broth in a medium saucepan. Bring to a boil, then cover and simmer on low for about 15 minutes. Fluff with a fork and set aside.
  2. Heat 1 tablespoon of oil in a large skillet over medium heat. Season 1 pound of chicken breasts with salt and pepper. Cook for 7-8 minutes on each side until golden brown and temperature reaches 165°F. Drizzle hot honey over the chicken in the last minute of cooking.
  3. Add more oil if needed and sauté 1 cup of chopped bell peppers and 1 cup of broccoli florets for 5-6 minutes until vibrant and tender-crisp. Set veggies aside.
  4. Divide the cooked quinoa among serving bowls, place sliced hot honey chicken atop quinoa, and add sautéed vegetables.
  5. Drizzle with a mix of soy sauce and sesame oil for extra flavor.
  6. Garnish with sliced green onions, sesame seeds, and lime wedges. Serve warm.
