  • 3-4 lbs Organic Chicken Thighs and drumsticks are recommended.
  • 1-2 Tbsps Browning Sauce Optional, but adds depth.
For the Spice Blend
  • 2-3 Tbsps Jamaican Green Seasoning All-purpose seasoning can be substituted.
  • 2+2.5 Tbsps Jamaican Curry Powder Burn it for enhanced flavor.
  • 1 tsp Sea Salt Adjust to taste.
  • 0.5 tsp Smoked Paprika Optional.
  • 1 tsp Ground Allspice
For the Sauce
  • 1 can Full-Fat Coconut Milk 14 oz.
  • 1 cup Organic Chicken Stock Low-sodium preferred.
For the Vegetables
  • 2 medium Potatoes Peeled and cubed.
  • 2 medium Carrots Peeled and chopped.
  • 1 medium Bell Pepper Chopped.
  • 3 Garlic Cloves Minced.
  • 2 tsps Fresh Ginger Minced.
For the Heat
  • 1-3 Scotch Bonnet Peppers Chopped or whole.
  • 1 Tbsp Jamaican Pepper Sauce Or your favorite hot sauce.
For Garnishing
  • 2 Green Onions/Scallions Chopped.
  • 2 Fresh Thyme Sprigs

Method
 

Step-by-Step Instructions
  1. Marinate the chicken by combining the organic chicken with browning sauce, Jamaican green seasoning, sea salt, smoked paprika, and Jamaican curry powder. Seal in a ziplock bag and refrigerate for at least 3 hours.
  2. Brown the chicken pieces in a skillet with olive oil for about 3-4 minutes per side until golden brown, then set aside.
  3. Burn the Jamaican curry powder in the same skillet for 1-2 minutes, stirring constantly.
  4. Make the curry sauce by adding garlic, ginger, scotch bonnet peppers, green onions, carrots, and bell pepper to the skillet. Sauté for 5-7 minutes.
  5. Incorporate liquids by pouring in coconut milk and chicken stock. Bring to a gentle boil and simmer.
  6. Finish cooking by adding the browned chicken, cubed potatoes, scallions, and thyme to the skillet. Simmer for 20-25 minutes.
  7. Serve and garnish with chopped chives, alongside fluffy rice or steamed vegetables.
