Ingredients
  

For the Soup Base
  • 2 tbsp Olive Oil Vegetable oil can be an alternative.
  • 3 cloves Garlic, minced Use garlic powder (1/2 tsp) if fresh isn't available.
  • 1/2 large Red Onion, chopped Yellow onion can be a substitute.
  • 1 large Red Bell Pepper, chopped Green bell pepper can be used instead.
  • 2 large Carrots, chopped Parsnips can be a swap.
  • 2 lbs Ground Beef (80/20 recommended) Swap for ground turkey or chicken for a leaner option.
  • 3/4 medium Green Cabbage, chopped Red cabbage can work too.
  • 14.5 oz can Diced Tomatoes Fresh tomatoes add a lovely touch when in season.
  • 6 cups Beef Stock Consider vegetable stock for vegetarian version.
For the Seasoning
  • 1 tbsp Paprika Swap for smoked paprika for a bolder flavor.
  • 1 tsp Thyme
  • 2 tsp Oregano Fresh herbs can be used in greater amounts.
To Taste
  • 1 tsp Salt Adjust according to flavor preference.
  • 1/2 tsp Pepper Adjust according to flavor preference.

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large pot over medium-low heat. Add ½ large chopped red onion and sauté until translucent, about 5 minutes.
  2. Add 3 minced garlic cloves and 1 large chopped red bell pepper. Cook for an additional 3-4 minutes.
  3. Increase the heat to medium and add 2 pounds of crumbled ground beef along with 2 large chopped carrots. Cook until nearly browned, about 6-7 minutes.
  4. Stir in ¾ medium chopped green cabbage and cover the pot. Cook for about 5 minutes.
  5. Add a 14.5 oz can of diced tomatoes, 1 tablespoon of paprika, and 6 cups of beef stock. Bring to a low boil.
  6. Reduce heat to low and simmer uncovered for 20 minutes, stirring occasionally.
  7. Before serving, taste the soup and season with 1 teaspoon of salt and ½ teaspoon of pepper.
