Cooking Steps
  1. Preheat your Blackstone griddle or a large skillet over medium-high heat. Add 1 tablespoon of oil and allow it to heat until shimmering.
  2. Add the sliced Yukon Gold potatoes to the griddle. Sprinkle with garlic powder, onion powder, smoked paprika, black pepper, and salt. Cook for 10-12 minutes, stirring occasionally.
  3. Push the potatoes to one side of the griddle. Add another tablespoon of oil and heat slightly before placing the sliced smoked sausage on the grill. Cook for about 5 minutes, turning occasionally.
  4. Fold in the chopped onion, red bell pepper, and zucchini alongside the sausages and potatoes. Stir and cook for another 5-7 minutes.
  5. Taste and adjust seasoning if needed. Remove from heat and garnish with chopped parsley before serving.
