Method
 

Preparation
  1. Cook the crumbled sausage in a non-stick skillet over medium heat for 5 to 7 minutes until browned.

  3. Add hash browns and cook for an additional 2 to 3 minutes until heated through.
  4. Warm tortillas in a separate pan or microwave for about 30 seconds until pliable.
  5. Spoon the filling into each tortilla and roll them tightly. Place seam-side down in a greased baking dish.
  6. Brown additional sausage for the gravy, sprinkle flour, and gradually whisk in milk, cooking until thickened.
  7. Preheat oven to 350°F (175°C). Pour gravy over enchiladas, sprinkle cheese, and bake for 20 minutes.
