Step-by-Step Instructions
  1. Heat olive oil and butter in a large skillet over medium heat. Add sliced onions, sugar, salt, and black pepper. Cook undisturbed for 5 minutes, then stir occasionally for 15 minutes until golden brown. Mix in balsamic vinegar and thyme for an additional 5 minutes.
  2. Preheat the oven to 400°F (200°C). Roll out puff pastry on a floured surface to about 1/8 inch thick. Cut into 6 rectangles, roughly 4x6 inches each, and keep cool in the fridge.
  3. Place puff pastry rectangles on a baking sheet lined with parchment paper. Spread caramelized onion mixture on each rectangle leaving a ½ inch border. Crumble goat cheese over the onions and sprinkle with extra thyme.
  4. Bake for 15 minutes, keeping an eye on them to ensure the pastry puffs and turns golden brown.
