Ingredients
  

Chicken Marinade
  • 1.5 pounds Chicken cut into bite-sized pieces for grilling
  • 3-4 Thai Peppers adjust according to spice preference
  • 1 Shallot chopped; red onion is an alternative
  • 2 stalks Lemongrass trimmed and chopped
  • 3 cloves Garlic minced
  • 1 teaspoon Fresh Ginger grated
  • 2 tablespoons Fish Sauce or substitute with soy sauce for vegetarian
  • 0.25 cup Brown Sugar
  • 3 tablespoons Soy Sauce
  • 2 tablespoons Sriracha
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 2 tablespoons Cilantro chopped
  • Spicy Chili Flakes optional, sprinkle to taste
Peanut Sauce
  • 0.25 cup Peanut Butter
  • 1 tablespoon Rice Wine Vinegar
  • 2 tablespoons Chili-Garlic Sauce
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Honey
  • 1 teaspoon Lime Juice
  • 1 teaspoon Cayenne Powder adjust based on spice level
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Ginger Powder
  • 1 tablespoon Water added gradually for consistency
For Skewering
  • Bamboo Skewers soaked in water to prevent burning

Method
 

Mix Marinade
  1. Combine chicken pieces with garlic, ginger, and all marinade ingredients in a bowl. Coat well, cover, and refrigerate for at least 1 hour.
Prepare Skewers
  1. Soak bamboo skewers in water for about 30 minutes. Thread marinated chicken onto the skewers.
Preheat Grill
  1. Preheat your grill to medium heat. Lightly oil the grill grates.
Grill Skewers
  1. Grill skewers for 4-5 minutes on each side until golden brown and internal temperature reaches 165°F.
Prepare Peanut Sauce
  1. Whisk together all peanut sauce ingredients in a bowl and add water until desired consistency is achieved.
