Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine peanut oil, grated ginger, chopped green chilies, cumin seeds, turmeric, red pepper flakes, and salt.
  3. Add shredded cabbage and shredded carrots to the bowl and toss thoroughly.
  4. Incorporate fresh curry leaves into the vegetable mixture and toss gently.
  5. Line a baking sheet with parchment paper and spread the vegetable mixture evenly.
  6. Place the baking sheet in the preheated oven and roast for 20-25 minutes, stirring halfway through.
  7. Remove the baking sheet from the oven and sprinkle with fresh grated coconut and chopped cilantro.
  8. Drizzle with lemon juice and toss gently before transferring to a serving dish.
  9. Garnish with crushed peanuts or sesame seeds and serve hot.
