Preparation
  1. In a rice cooker, measure 3 scoops of sushi rice (approximately 2 cups) and rinse it under cold water until the water runs clear. This helps remove excess starch.
  2. Add the diced mango, a pinch of salt, full-fat coconut milk, and enough water to reach the 3-line mark in your rice cooker.
Cooking
  1. Close the rice cooker lid and select the White Rice setting. Allow it to cook until the indicator shows it’s finished, which typically takes around 25 minutes.
  2. Once finished, let it sit for another 5 minutes to allow the rice to continue steaming.
Serving
  1. Open the rice cooker, and gently fluff the Mango Coconut Sticky Rice with a fork. Serve the rice warm, accompanied by your favorite grilled meats or seafood.
