Preparation
- In a rice cooker, measure 3 scoops of sushi rice (approximately 2 cups) and rinse it under cold water until the water runs clear. This helps remove excess starch.
- Add the diced mango, a pinch of salt, full-fat coconut milk, and enough water to reach the 3-line mark in your rice cooker.
Cooking
- Close the rice cooker lid and select the White Rice setting. Allow it to cook until the indicator shows it’s finished, which typically takes around 25 minutes.
- Once finished, let it sit for another 5 minutes to allow the rice to continue steaming.
Serving
- Open the rice cooker, and gently fluff the Mango Coconut Sticky Rice with a fork. Serve the rice warm, accompanied by your favorite grilled meats or seafood.
