For the Tartare
  • 1 lb Fresh Salmon Choose sushi-grade salmon for best flavor.
  • 1 Tbsp Olive Oil Adds moisture without overpowering taste.
  • ¼ small Red Onion Very finely diced; shallots can be used for milder flavor.
  • 1 heaping Tbsp Capers Drained and roughly chopped.
  • ½ small Jalapeño Finely diced; adjust according to spice preference.
  • 1 tsp Dijon Mustard Adds depth and creaminess.
  • 1 Lemon Zest (1 tsp) and fresh juice (2-3 Tbsp) used.
  • 2 tsp Fresh Chives Thinly sliced; complements salmon flavor.

Method
 

Instructions
  1. Optional freezing: place fresh salmon in the freezer for about 15 minutes.
  2. Once salmon is slightly frozen, pat dry and slice into ¼-inch thick planks, then dice into ¼-inch cubes.
  3. In a mixing bowl, combine diced salmon, olive oil, onion, capers, mustard, lemon zest, and jalapeño. Stir gently.
  4. Let the mixture sit for 5 to 10 minutes to meld flavors.
  5. Serve by packing into a mold or directly in a bowl, and garnish with cucumber slices or salad greens.
