Ingredients
  

For the Chicken
  • 1 pound Chicken thighs Can substitute with chicken breast for a leaner option.
  • 2 tablespoons Corn starch Essential for marinating chicken.
For the Sauce
  • 3 tablespoons Soy sauce Adds umami depth.
  • 1 tablespoon Dark soy sauce Provides rich color and sweetness.
  • 1 tablespoon Oyster sauce Enhances overall flavor.
  • 1/2 teaspoon Black pepper powder Adjust to taste.
For the Scallions
  • 4 stalks Scallion Green onions can be used interchangeably.
For Cooking
  • 2 tablespoons Oil Non-stick oil recommended.

Method
 

Directions
  1. In a large bowl, combine chicken thighs with soy sauce, dark soy sauce, oyster sauce, black pepper, and corn starch. Mix well and let marinate for 10 minutes.
  2. Heat 2 tablespoons of oil in a non-stick pan over medium heat. Add the marinated chicken and fry for 5-7 minutes until golden brown and fully cooked.
  3. Add the white parts of the chopped scallions and stir-fry for 1-2 minutes. Then add the green parts of the scallions and stir for another 10-20 seconds.
  4. Remove from heat and serve on a platter. Optionally sprinkle with more black pepper or sliced scallions.
